L'Américain Roy C. Farrell et l'Australien Sydney H. de Kantzow fondent la Cathay Pacific Airways à Hong Kong le 24 septembre 1946. Initiallement basés à Shanghai, les 2 hommes d'affaires déménagent finalement à Hong Kong et fondent Cathay Pacific Airways. À l’époque, la flotte se limitait à un seul Douglas DC3, tout juste démobilisé. La flotte s'étend maintenant à 97 appareils et pour son 60ème anniversaire , la flotte de Cathay Pacific comptera plus de 100 appareils.

Le 9 juin 2006, Cathay Pacific, Swire Pacific, Air China, CNAC et CITIC Pacific ont conclu un accord modifiant la structure de l’actionnariat de Cathay Pacific, Dragonair et Air China. Selon cet accord sujet à l’approbation des autorités, Dragonair deviendra une filiale à 100% de Cathay Pacific.

L'âge moyen de la flotte de la compagnie Cathay Pacific est très jeune : 7 ans. Elle se compose de tous les avions long-courriers de dernière génération : 

- 5 Boeing 777-200 et 11 Boeing 777-300
- 23 Boeing 747-400
- 15 Airbus A340-300 et 3 Airbus A340-600
- 26 Airbus A330-300

Pour la branche Cargo de Cathay Pacific Airways, on pourra citer 6 Boeing 747-400 et 7 Boeing 747-200, tous deux en version Fret
